This is my favorite season of the year to eat nourishing comfort food.

The winter season in Japan offers an outstanding variety and selection of seasonal dishes that are dreamy good.

You wonā€™t believe how wonderfully flavorful the vegetables get. Yumā€¦

The Japanese Kabocha pumpkin is one of my favorite vegetables.

Boil Kabocha squash in hot water to enhance its natural sweetness and nutty flavor. So simple!

This is an easy and quick recipe I want to share with all of you.

Add rosemary for a hint of freshness and tahine soy yogurt making it creamy and flavorful. This dish tastes so good with couscous.

Headline recipe:

Kabocha & carrot with stir fried medley of mushrooms

300grĀ  Kabocha squash

1 medium carrot

2Ā  fresh rosemary prigs

1 tbsp salt

Water (enough to cover to cook the veggies)

300gr mushroom medley (e.g. shimeji, maitake, shitake, button, etc.)

1T Olive oil

1T Soy sauce

Ā 

  1. Cut the kabocha squash into cubes and the carrot into chunks.
  2. Place the kabocha ,carrot, rosemary into a pot and add enough water to cover.Ā  Add salt to taste and bring to a boil until the veggies are soft.
  3. Drain the water with a strainer and place a lid on top and let it steam for a few minutes.
  4. Meanwhile tear apart the mushrooms and slice the shiitake or button mushrooms.
  5. Place mushroom medley in a frying pan with heated olive oil and stir fry for about 5 minutes. Add the soy sauce and stir fry for another minute.
  6. Assemble the kabocha,carrot,mushrooms and garnish with the tahini soy yogurt sauce.

Tahini Soy Yogurt Sauce 

This dressing is also very good with salads, dipping sauces, sandwich spreads and many other dishes.

You can replace the soy yogurt with any other yogurt you prefer.

200gr Soy Yogurt

2T Tahini

1 Lemon Juice

Salt & Peper pepper

Ā 

  1. In a blender add all the ingredients and blend it until smooth.

Saffron Couscous 

Couscous is a great healthy ingredient to always have in your kitchen.Ā 

You won’t believe how quick and easy it is to cook.

Ā 

150gr Couscous

150gr Boiled water

3 Safran

1T Olive oil

Salt


  1. In a bowl combine the couscous, saffron and boiling water.Ā  Mix well and cover it tightly with plastic wrap. Leave on the side let it steam for 10 minutes.
  2. Add olive oil, a pinch of salt and fluff couscous with a fork.Ā  Done!
